Long have been the jokes of making sure to lock your doors during the summer when you go to church or to town or you will end up with zucchini on your passenger seat when you get back. All joking aside what do you do with all of the bountiful abundance of zucchini when it is in season.
There are many ways to enjoy zucchini and summer yellow squash. Some of those are roasted, grilled, in casseroles, as a pasta sauce and many more. But after awhile of eating zucchini my family gets tired of it.
My solution to this problem is to freeze the zucchini shredded. I can then pull it out of the freezer to make zucchini bread, or put it in to a pasta sauce or soup to beef up the veggies without my kids knowing,

How To Freeze Zucchini Shredded?
- Wash and peel your zucchini if desired.
- Cut a little off each end of the zucchini.
- Cut the zucchini into manageable pieces to fit in food processor shoot.
- Shred zucchini in the food processor with the shredding attachment.
- Portion zucchini shreds into quart freezer bags, 4 cups to a bag.
- Label each bag with the contents and year it was packaged.
Can You Freeze Squash?
Yes you can freeze squash. Frozen squash and zucchini will not have to same texture once thawed, but it is great added to quick breads, casseroles, and pasta sauces.
Can You Freeze Zucchini Without Blanching?
Zucchini is one of the easiest garden vegetables to freeze. It doesn’t require blanching to be able to freeze it. All you have to do is shred it and then bag it in freezer bags.
I prefer to shred my zucchini in my food processor with the shredding attachment. You can use whatever you have to shred your zucchini, a box grater or hand held grater will work great too.
When I am done shredding I package my zucchini in quart freezer bags. I put 4 cups in each bag because that is how much my zucchini bread recipe calls for to make a double batch.
