- 3 Over Ripe Bananas
- 1/3 cup Butter, melted
- 1/2 cup Sugar
- 1 egg, beaten
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- salt, to taste
- 1 1/2 cups fresh milled flour (all purpose flour can be used too)
- 1/2 cup chocolate chips

- Sometimes I like to swap half of the butter for equal parts applesauce.
- You can use all purpose flour in place of freshly milled flour.
- I have also used this recipe to make zucchini and pumpkin bread. I use 2 cups of shredded zucchini or pureed pumpkin in place of the bananas.

- I love to bake this recipe into mini loafs and muffins. I filled the mini loaf tins and muffin tins about 2/3 of the way full and then bake them for about 20 minutes. I like to use my cookie scoop to get even amounts of batter in each tin.
- If you need to bake more cupcakes than a muffin tin will hold, regular canning rings will hold a cupcake liners really well. Line the canning rings up on a baking sheet and then put the cupcake liners in them like you would a muffin tin.
