Fresh Milled Flour Chocolate Chip Banana Bread

Ingredients
  

  • 3 Over Ripe Bananas
  • 1/3 cup Butter melted
  • 1/2 cup Sugar
  • 1 egg beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • salt to taste
  • 1 1/2 cups fresh milled flour all purpose flour can be used too
  • 1/2 cup chocolate chips

Instructions
 

  • Preheat the oven to 350F
  • In a bowl add the bananas and mash them until they are smooth. Add in the melted butter and then stir until well combined.
  • Add in the sugar, egg, vanilla, baking soda, salt and flour, and stir until the batter is smooth.
  • Let the batter rest for at least 15 minutes, to let the whole wheat flour to fully hydrate.
  • Stir in the chocolate chips gently. Be careful not over mix the batter. Pour the batter into a greased loaf pan. Top with additional chocolate chips.
  • Bake for 50 minutes to an hour, or until a toothpick comes out clean.
  • cool completely before serving.

Notes

Ideas for substitutions:
Sometimes I like to swap half of the butter for equal parts applesauce.
You can use all purpose flour in place of freshly milled flour.
I have also used this recipe to make zucchini and pumpkin bread. I use 2 cups of shredded zucchini or pureed pumpkin in place of the bananas.
