Ingredients
  

For the Chicken

  • 1 24–32 ounce bag frozen breaded chicken strips
  • Balsamic glaze for drizzling

For the Bruschetta

  • 4 Roma tomatoes or 2–3 vine-ripened tomatoes, diced
  • ¼ cup finely diced onion
  • 8-10 fresh basil leaves finely chopped
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions
 

  • Bake the frozen breaded chicken strips according to the package directions until hot and crispy.
  • While the chicken bakes, prepare the bruschetta. In a medium bowl, combine the diced tomatoes, onion, chopped basil, olive oil, salt, and pepper. Stir until well combined.
  • For the best flavor, cover and refrigerate the bruschetta for 1–3 hours to allow the flavors to meld. If you're short on time, it can be served immediately.
  • Once the chicken is finished cooking, place the chicken strips on serving plates.
  • Spoon the fresh bruschetta over the chicken.
  • Drizzle with balsamic glaze just before serving.
  • Serve immediately with your favorite sides.

Notes

  • Roma tomatoes and vine-ripened tomatoes both work well in this recipe. Use whichever looks freshest.
  • Fresh basil is highly recommended for the best flavor.
  • Store leftover bruschetta separately from the chicken to keep the chicken crispy.
