Fresh Milled Flour Gravy
This simple from-scratch gravy comes together in just a few minutes and is the perfect way to use your freshly milled flour. Serve it over biscuits, potatoes, eggs, or even country fried steak for a cozy meal your family will love.
- 4 tablespoons fat butter, bacon grease, or lard
- 4 tablespoons fresh milled flour I like hard white wheat or kamut, but use what you have on hand
- 4 cups milk
- Salt and pepper to taste
In a large skillet, melt the fat over medium heat.
Once melted, whisk in the flour to form a paste (roux). Keep whisking while it cooks until it turns a light golden color.
Turn the heat down slightly and slowly pour in the milk, whisking continuously to prevent lumps.
Continue whisking as the mixture thickens. Cook until it reaches your desired consistency (remember, it will keep thickening as it cools).
Season with salt and pepper to taste.
Ladle over hot, fresh biscuits for a classic breakfast.
Serve with eggs and fried potatoes for a hearty start to the day.
