Fresh Milled Flour Gravy

This simple from-scratch gravy comes together in just a few minutes and is the perfect way to use your freshly milled flour. Serve it over biscuits, potatoes, eggs, or even country fried steak for a cozy meal your family will love.

Ingredients
  

  • 4 tablespoons fat butter, bacon grease, or lard
  • 4 tablespoons fresh milled flour I like hard white wheat or kamut, but use what you have on hand
  • 4 cups milk
  • Salt and pepper to taste

Instructions
 

  • In a large skillet, melt the fat over medium heat.
  • Once melted, whisk in the flour to form a paste (roux). Keep whisking while it cooks until it turns a light golden color.
  • Turn the heat down slightly and slowly pour in the milk, whisking continuously to prevent lumps.
  • Continue whisking as the mixture thickens. Cook until it reaches your desired consistency (remember, it will keep thickening as it cools).
  • Season with salt and pepper to taste.

Notes

Ladle over hot, fresh biscuits for a classic breakfast.
Serve with eggs and fried potatoes for a hearty start to the day.
Pair with country fried steak or roasted chicken for dinner.
