Preheat your oven to 350°F (175°C). Line a large baking sheet with parchment paper for easy cleanup and cutting.
Step 2: Warm the peanut butter and honey
In a microwave-safe measuring cup or bowl, combine the peanut butter and honey. Heat for 30–60 seconds until the mixture is warm and easy to stir.
Step 3: Mix it all together
In a large mixing bowl, combine the oats, eggs, peanut butter-honey mixture, and chocolate chips. Stir until everything is evenly coated.
Step 4: Shape the bars
Pour the mixture onto your prepared baking sheet. Spread it out and press down firmly until the mixture is about 1 to 1½ inches thick in a roughly square or rectangular shape.
Step 5: Bake
Bake for 15–17 minutes, until the center is set and the edges are just beginning to turn golden.
Step 6: Cool and cut
Place the pan on a cooling rack. Once the bars are completely cooled, use a bench scraper or sharp knife to cut them into strips about 1 inch wide, then cut crosswise into bars about 4 inches long.
