Ingredients
  

  • 480 g warm water 105–110°F
  • 14 g active dry yeast
  • 25 g honey or sugar
  • 56 g olive oil
  • 15 g lemon juice optional
  • 12 g salt
  • 500 g fresh milled hard white wheat flour
  • 350-400 g bread flour

Instructions
 

  • Combine warm water, yeast, and honey. Let stand until foamy.
  • Mix in olive oil, lemon juice, salt, and fresh milled flour.
  • Gradually add bread flour until a soft dough forms.
  • Knead until smooth and elastic.
  • Let rise for 1 hour.
  • Divide into 16 pieces and let rest for 10–15 minutes.
  • Roll into ¼-inch thick ovals.
  • Cook on a hot cast iron skillet for 1–2 minutes per side.
  • Enjoy warm or freeze for later.
